Since i am overseas, if i drool for local food, have to cook it myself.
So anybody want to share recipe here.
A good sambal recipe will be good, and bubur cha cha!!!! Oooohh.....

hey dino, if u crave for local food so much, the next time you come back to Malaysia, go penang, and look for Hup Loong, they sell those premix for a lot of local favourites. i'm sure you can buy lots of them back to the states. just need to add the meat and all...hehe...delicious...speaking of that...i think when me go penang, we also need to grab a few of those!!!!

hehe...not a stupid question...very much like the original lor....dun really have to add a lot of things to make it very tasty....:D
i'll try and look at my mom's recipes and if can i'll contribute more to this post...me also learning how to cook better :D

1 packet of instant (dino will need this) coconut milk
1 litre of water (dino enough for yourself or not?)
sugar to taste
sago (dino you can get them in US meh?)
sweet potatoes
yam
nien kau (since CNY around the corner. ask your mom to fedex to you)
soak sago in the water for about 15 mins. Steam sweet potatoes and yam till soft. Boil the water in a pot. Add all the rest of the ingredients in the water and stir. Kau tim liao. Reminder: cook under slow fire or else the coconut milk will becomes lumphy.

Didn't know the one at Taman Perling. Tasted the one at Jalan Kolam Air. Quite Good. :D
SS2 pasar malam on Tuesdays or Wednesdays have a laksa place, where they have van, serves the best dem laska i have ever tasted. Not sure if its still there.

400 gm of pork ribs... if u want more... add more lar...
3-4 cloves of garlic (complete clove... not those... "san..san 1")
Black sauce (to make the soup brownish...unless u want it clear)
pinch of salt
pepper....
Get a pot fill up with 3/4 of water...boil it... then add Eu Yang San Pk, pork ribs and whole garlic (don't peel the skin)....simmered it (i.e. slow fire) till it well done....(20-30 mins or use ur taste bud) Add the black soy sauce and salt (depend on your taste) into it...
Ready to serve.... add pepper to your taste...

the ss2 pasar malam fall on monday, not tuesday lah. mostly the van is long queue. if you cant make it for monday, then go to chowyang on thursday, there are 2 stall selling asam laksa.

Jang, you forgot the pandan leaves. It a very important ingredient or else the bubur cha cha will not taste good. Same as other "tong sui". As for the coconut milk, if you are using the instant ones, you will have to add in only after the syrup is ready. Boil it and take away from fire. If you are using the fresh ones, you can in the second squeeze in with the syrup to boil. Then the first squeeze (very thick - without adding water) you can add in during serving. It will taste better.

here's a very simple dessert, but one of my favourites...
(because i can cook for guests with one eye close...hehe... :p )
ripe pears (one per person)
1 bottle red wine (cheap also can)
cloves
orange peel
fresh sweetened cream or ice cream
peel the pears and put into a pot... also put cloves and orange peel in..
pour the red wine in and let cook... (go and do something else)...
check that red wine cover the pears (for appearance, longer you cook, darker)..
so once you like the shade (i like about 30 mins), take pear out..
serve with the wine as juice (alcohol already evaporated) and with cream/ ice cream..

Accidentally discovered one of the easiest way (next to buying instant mix) to make your own mash potato:
US Russet potatoes - peeled and sliced
Cheese, butter, pepper, salt, and any other seasoning you like ...to taste
Put water (not too much) in pot and chuck the potatoes in. Leave to boil and stir occasionally. Once soft, keep stirring with a fork until it becomes smooth. Add seasoning when done. Add more water (or milk if you like it creamier) if the mixture becomes too dry.
Additional toppings in a jiffy - try corned beef or just top with more cheese and melt it in the toaster oven.
Note: Never use Holland potatoes or the type you put in the curry.

This is one of daboss' favourites:
Minced chicken/pork
Garlic - finely chopped (amount depends on how much you like garlic)
Light soy sauce and pepper to taste
Oil
Heat a little oil in frying pan. Put in the garlic and fry till golden. Then put in the meat plus seasoning. Stir fry until meat is cooked through and sauces dried up (not too dry, though). Use as topping for salad, noodles, etc.
Variant - if you like Chinese mushrooms, soak them in hot water and slice thinly. You can add in the mushrooms just before you put in the meat. And if you like sauce, you can add some water to the meat.To thicken the sauce, mix some water with a little corn or tapioca starch and pour the mixture into the meat dish wile you are cooking. Think Pan Mee toppings:)

Last time i always craved for Penang Laksa in S'pore n as u know in S'pore ppl call curry as Laksa. I rem when i first time in Sin, i ordered laksa n they gave me curry, i was so sad!! I HATE CURRY!!
But now i eat everything n i dun crave for Penang Laksa anymore..
The only funny thing is whenever i fly to "Ang Mo" countries i will look for Chinese food. Then in sin i will look for western food. Ppl said i siao!! Haha!! Rebellious..

travel abroad must try local foods there mah...!

Mix everything in rice cooker and add water if necessary. Santan + water should equal the normal amount of water you use to cook rice..generally 1 cup rice to 1 1/2 cup water. Avoid using the sticky type rice like Jap short grain. My personal favourite is Dragon brand fragrant rice - perfect everytime.

Sambal Ikan Bilis
Ikan bilis (as much as you like)
6 cili kering soaked and seeds removed (more if you like it really spicy)
6 shallots
1 small tomato (optional)
1 onion sliced (optional)
Gula Melaka or brown sugar (to taste but must put a little)
Asam jawa (a.k.a. asam ko) mixed with 1 tablespoon pf water
Belacan (optional - need to pan fry without oil before using)
Salt
Garnishing: Hard-boiled egg, cucumber and kacang.
Rinse ikan bilis and pat dry. Heat up oil in wok and make sure that it's hot before putting in the ikan bilis. Fry over medium heat until golden. Remove and keep in air tight container once cool.
For the sambal, blend cili kering, shallots, tomato and belacan. You can add a little water but not too much while blending. Heat some oil in wok over medium heat (you can use the leftover oil from frying ikan bilis). Pour the blended mixture and stir fry until the oil separates from the mixture (keluar minyak is the term they normally use). You must not add any water before this.
Once keluar minyak, add the gula melaka, salt and asam jawa juice to taste. If you like onions, add them to the sambal now. When the onions are soft, add in the ikan bilis, stir and turn off the fire.
Note: If you find the sambal too dry, add in the water before you put in the ikan bilis.
Happy trying....Dino and Lillian...
To be honest, I normally just agak-agk the mount of stuff to put. If you get this right, you can use the same sambal for fresh prawns, fish...etc.

Actually, there are quite a number of dishes that I can cook quite well (not boasting). Kochun can ask my ex-housemate, Kah Huey. My mum says my chinese fried rice is really yummy. Will post more recipes here in the near future.
But no. 1 ingredient to make sure things turn out right is that you must cook with love:)

i agree with that... i love cooking, and i love eating... but they tend not to come together...
so when i'm in mood to cook, my friends and family get a feast...
then when i'm in mood to eat, they buy my meals! :D

Petai
Fresh Udang - shelled or squid also can
1/2 cup air asam jawa
To pound together
4 to 6 Fresh chili/if dry chili soak in hot water 1st
6 to 8 shallot
A handsful of dried prawn
belacan
Heat oil in wok. Fried pounded ingredients till fragrant. Add in Petai and prawns. Quick stir. Add in the asam jawa. Don't cook for too long or else the prawns will be over cook and harden (depends on individual preference).

That is only if u buy the belacan block type...if powder type, no need. DaLady thinks that if you pan fried it first, it will enhance the taste. But I've never done that before unless I'm making the sambal belacan cos you are eating the sambal raw.

put vanilla pod into a jar of sugar (tight lid) and leave to "hibernate" for a few weeks...
other variation, put orange peel into the jar of sugar...
smell good and make great edible present...
and of course can be used for making drinks, cooking etc etc...

quick and easy... handy brekkie food...
crack 2 large eggs, add 1 tablespoon water, add mix herbs (if desired)...
beat the egg and pour into omelette pan... cook omelette to your liking...
then add chopped tomotoes, bacon (or ham), and cheese to half side of the omelette...
fold the other half side over, dish up and serve...

oh yeah, i remember that recipe... still have it actually... make the best choc chips...
actually after digging around the net, found famous amos actually not too special..
his original recipe is the same as the recipe behind the packet of nestle tollhouse choc chips, only with more choc chips in it...
Tom Yum recipe -- Rip from The Star :D
Ingredients
# 8 freshwater prawns, shelled and deveined with tails intact or you can choose not to shell the prawns
# 150g sotong, cleaned and cut into pieces
# 2 blue crabs, cleaned and cut into halves - optional
# 5 pieces red snapper fish meat
# 100g abalone mushrooms
# 6 cups chicken stock - I buy the ready can ones with no sodium....
# 20g galangal (lengkuas)
# 3 stalks lemon grass (serai)
# 12 cilipadi
# 3 roots Chinese parsley
# 4 tbsps chilli paste in oil (Nam Prik Pao) - Optional
# 6-8 kaffir lime leaves (daun limau purut) - if add more, the flavour is better
Seasoning:
# 1 tsp salt, or to taste
# 1-2 tbsp fish sauce (nampla)
# 3-4 tbsp lime juice, or to taste
# 1 tbsp oil
# 2 tbsps Maggi chicken stock granules
# Monosodium glutamate to taste
Garnishing:
# Chopped coriander leaves
Method
Smash the galangal and lemon grass slightly. Put them in a pot, add the cilipadi, parsley roots and chicken stock. Bring to a boil and add nam prik pao and kaffir lime leaves. Simmer for 10 minutes.
Put in all the seafood ingredients and mushrooms and bring to a boil until the seafood is cooked. Add in seasoning to taste. Serve hot and garnish with coriander leaves.

1 Indomie Goreng Pedas (regular oso OK but must add chili sauce)
Kg koh chili sos (or Maggi garlic oso can)
2 eggs
some oil
non-stick pot
first cook noodles until tender then drain. put noodles and all spice packets from the indomie in and stir. stir in cili sos. (can add fried shallots oso, quite nice). when all mixed up, push noodles to the side and add oil to bottom of pan. crack eggs, add pepper & salt to eggs. stir a bit, add and put the noodles on top of the egg. cook until eggs are firm, serve on plate (folded over like an omelette).

nope i don't use ice cubes. waters it down. :D i like the creamy consistency. more like milkshake i guess except i don't use milk.

no lah - if you like ice cubes you put lah. i am not a big fan of ice. i drink all my drinks straight up even (coke, water, OJ, rootbeer). never on the rocks. i will even pick out all the ice if the waiter brings me iced drink by accident.
so if you want to put ice in the mango strawberry smoothie, you are most welcome to do it! :D

happy trying siewjang! can substitute different fruits oso. i tried mango grape before, it taste ok but remember to peel the grapes before putting it in the blender (i just removed the seeds but didn't peel). the peel was too tough la and not nice to drink. but tasted nice. can do mango banana but only put 1 banana and maybe do 2 mangoes, otherwise the banana taste becomes too strong.
Do you need any ice cubes to make it a bit icy?

Caleb's mad about making smoothies and I'm lucky in that sense. I have nice smoothies for breakfast on weekends. Here's what he does:
Frozen yoghurt
Frozen Mixed Berries
Fresh Juice (can be any juice you fancy but Caleb likes Apple and Mango juice)
Blend frozen yoghurt and mixed berries with juice
When all's blended, put in some ice cubes to get that shaved ice effects.
It's yummy - you can also try that, Sila minus the ice.
Of course won't be as good as yours lah! :p

1 1/2 cups graham cracker crumbs (10 crackers)
1/4 cup sugar
6 tablespoons (3/4 stick) unsalted butter, melted
For the filling:
6 extra-large egg yolks, at room temperature
1/4 cup sugar
1 (14-ounce) can sweetened condensed milk
2 tablespoons grated lime zest
3/4 cup freshly squeezed lime juice (4 to 5 limes)
For the decoration:
1 cup (1/2 pint) cold heavy cream
1/4 cup sugar
1/4 teaspoon pure vanilla extract
Thin lime wedges
Preheat the oven to 350 degrees F.
For the crust, combine the graham cracker crumbs, sugar, and butter in a bowl. Press into a 9-inch pyrex pie pan, making sure the sides and the bottom are an even thickness. Bake for 10 minutes until firm and golden. Allow to cool completely.
For the filling, beat the egg yolks and sugar on high speed in the bowl of an electric mixer fitted with a paddle attachment for 5 minutes, until thick. With the mixer on medium speed, add the condensed milk, lime zest, and lime juice. Pour into the baked pie shell and freeze.
For the decoration, beat the heavy cream on high speed in the bowl of an electric mixer fitted with the whisk attachment until soft peaks form. Add the sugar and vanilla and beat until firm. Spoon or pipe decoratively onto the pie and decorate with lime. Freeze for several hours or overnight.
Note: If you have concerns about raw eggs, combine the yolks with 1/2 cup of the lime juice used in the recipe in a double boiler. Whisk constantly over medium heat until the mixture reaches 140 degrees. Use in place of the raw egg yolks, remembering to add the remaining 1/4 cup of lime juice to the filling mixture along with the condensed milk and zest.
when i made it, i used chocolate graham crackers to make a chocolate graham cracker crust. also i beat everything by hand (no mixer back then) and seriously sakit tangan, man! AND i beat the heavy cream too long and it separated into curds and whey. if beat a little longer i would have made butter. :( (and remember ALL beating was done with a whisk by hand!!) so my key lime pie didn't even have whipped cream topping.. :(

2 ribs celery with greens, finely chopped
1 medium yellow onion, finely chopped
Salt and pepper
3 tablespoons all-purpose flour

6 cups chicken stock
1 (28-ounce) can cooked pumpkin puree
2 cups heavy cream
1/2 teaspoon freshly grated nutmeg
Heat a medium soup pot over medium to medium high heat. Add the oil and melt the butter. Add bay, celery, and onion. Season the veggies with salt and pepper. Cook 6 or 7 minutes, until tender. Add flour, poultry seasoning and hot sauce, to taste, then cook flour a minute. Whisk in chicken stock and bring liquid to a bubble. Whisk in pumpkin in large spoonfuls to incorporate it into the broth. Simmer soup 10 minutes to thicken a bit then add in cream and nutmeg. Reduce heat to low and keep warm until ready to serve.

ingredients:
5-6 cups of bread or all-purpose flour (approx)
2 packages dry yeast
1 tablespoon salt
2 tablespoon sugar
2 cups hot water (120-130 F)
Sesame or poppy seeds (optional)
1 Baking sheet (Teflon, greased, sprinklend with cornmeal, or lined with parchment paper)
Place 4 cups flour in mixing bowl, add yeast, salt and sugar. stir until well blended. pour hot water and beat for 3 minutes with mixer flat beater.
gradually work in the remaining flour, 1/2 cup at a time, until the dough takes shape and is no longer sticky.
knead for 8 minutes with a dough hook until the dough is smooth, elastic, and feels alive under your hands.
place dough in a greased bowl, cover with plastic wrap and put in a warm place (80-100 F) until double in bulk (about 15 minutes).
punch the dough down, turn it out on the work surface and cut into 2 pieces. shape each into a round. place on the baking sheet. with a sharp knife or razor, slash an X on each of the loaves, brush with water, and if desired, sprinkle with sesame or poppy seeds.
place the baking sheet on the middle shelf of a cold oven. place a large pan of hot water on the shelf below, and heat the oven to 400F. the bread will continue to rise while the oven is heating. bake for about 50 minutes, or until the loaves are a deep golden brown. thump on the bottom crusts to test for doneness. if they sound hard and hollow, they are baked.
cool on metal racks beflre slicing.
since the bread has no shortening it will not keep beyond a day or so. even though it may begin to stale it will make excellent toast for several days. freezes well.

my book says to approx french flour, use 3 parts all purpose flour to 1 part bread flour. and for mt 5-6 cups of flour here i used this approximation. i did not use the sesame or poppy seeds (i really prefer my bread not to have seeds) and we froze 1 loaf in the freezer and ate the other loaf in half a day ;) you can keep the bread in the fridge and use for toast after 1 day out otherwise it might mold up.
also i gave the recipe for using a mixer. you can also do this by hand, of course, but also with a food processor with a plastic dough attachment. if you need the food processor option, let me know and i will edit this post.
bear in mind, this recipe was from a book so i am manually retyping the instructions!! :D

If you had a slow cooker, it will take about 5 hours for the nuts to soften. If you cook them in the stove (which I would not encourage you to do that) it will take about 6 hours. Very mah fan. You must soak the nuts over night. And during cooking, you must check on the water occassionally.

I think you can subsititue with high fibre cracker or digestive biscuit. Graham cracker is round and thick in size. :D Sorry, don't know how to explain. I think you can get them at Marks and Spencer.

you can use dry bayleaf oso i bet - make sure not to eat it lah. dried bayleaf can tahan years :)
also the "poultry seasoning" i believe is a mix of dried thyme, salt, black pepper, and maybe sage? i forget exactly - but it's a bunch of dried spices mixed together. so you can just put whatever's in your cupboard lah..

just going through the thread to print some recipe... noted about daLady's mash potatoes need to use fork to stir, sounds a bit hard work... i can bring back a masher if you want...?
anyway, here's something to share.... simple party snackyfood: pesto palmiers...
- 2 sheets of puff pastry (can be bought frozen), defrosted
- ready made pesto (can be basil or sundried tomato, either one is fine)
- mix sunflower and fruit seeds, chopped (optional, for basil pesto)
- raisins, chopped (option, to go with sundried tomato pesto)
1. roll out puff pastry and spread the pesto evenly
3. sprinkle with optional extras if used
4. curl the pastry from sides towards the centre (think curled in cat's moustache?)
5. wrap up and put into the fridge for about 30 minutes
6. preheat oven to 180C
7. slice the pastry about 1" thickness
8. bake for 10-15 minutes until pastry rise and crispy
this is not a great pic, but the pesto palmier is the green pastry on top left corner...

can make mini pizzette too, by spreading tomato puree over....
then spread with finely chopped peppers, mushroom etc...
roll it like a wheel, cut up and bake... another quick and easy party snack... :)

2 pounds ground beef

Salt to taste
Pepper to taste
In a large pan,saute in olive oil the onion,celery,carrot and garlic over medium hean until the onion is translucent. In another pan brown the meat. Once meat is browned,drain off the grease and add meat to vege. mixture. Add the wine,reduce it by half, then add the tomatoes,salt and pepper. Cook over medium heat for approx. 30 mins stirring often.
This sauce can be server hot with all kinds of pasta and can be refrigerated and used in all kinds of baked dishes.
Makes 6 cups!!!

i use the puff pastry for a karipuff knock off - make kari (i usually do diced potato and chick pea kari) let cool. then roll out puff pastry dough, leave a strip in the middle about 2-3 inches wide and cut diagonal 1-inch strips of the 3 inches to the left and right of the middle (not cut off, but still connected to the solid 3 inch middle section). put the cooled kari in the middle, then pull 1 strip from the left, 1 strip from the right alternating, to the top of the pile to make a braid pattern at the top. brush with egg, bake.

A basic sauce
Spinach Sauce
--------------
1 quart heavy cream
4 ounces garlic cloves, sliced
1 pound frozen spinach, drained well and chopped
2 teaspoons salt
2 teaspoons pepper
2 ounces butter
In a small saucepan, bring the cream to a simmer over medium low heat. Add the garlic. Cook until cream is reduced by half. add the spincah,salt and pepper and heat through, cooking for approximately 5 mins
Remove sauce from the heat and add butter.
Mix well until the sauce has thickened. If you prefer a smoother sauce, puree in a blender.
so far i only tasted dino's maggi mee... :(

mmmm sounds good. i've made spanakopita before with filo dough... but i think next time i make spanakopita i will make it little individual triangles instead of 1 big pie...i like to make food small in portable size... that way less problem of food wasting, and easier for everyone to handle the portion size as they wish... plus small things are usually good thing ;)

Another basic sauce
Marinara Sauce
---------------
1/4 cup olive oil
1 red onion, chopped
6 garlic cloves, chopped
2 cans crushed tomatoes
Salt to taste
3 tablespoons chopped fresh basil
In a 2 quart saucepan, heat the olive oil over medium heat.
Add the onion and garlic and cook until golden brown, approx. 8-10 mins.
Add the tomatoes and salt. Bring to a boil and cook over low heat for approx. 30 mins, stirring often. Turn off the heat and add the fresh basil.
Makes 6 cups.

Spaghetti and Meatballs
----------------------
1 1/2 pounds ground beef
1/2 cups grated Pecorino Romano Cheese(Malaysia...dunno can get this or not)
3/4 cups dry Italian style bread crumbs
4 large eggs
1/4 cups chopped garlic
2 teaspoons salt
In a large mixing bowl, combined ground beef,Romano cheese,bread crumbs,eggs and salt; Mix well. Shaped into meatballs the size of golf balls.
Use all the meat mixture(makes about 40 meatballs). Set meatballs aside and let rest for approx. 1 hour.
Cook meatballs in the Meatball Sauce above:

i drink lactose free skim milk, cos i think i'm slightly lactose intolerant, so if i take normal milk first thing in the morning, my stomach gets really upset...
This is one of daboss' favourites:
Minced chicken/pork
Garlic - finely chopped (amount depends on how much you like garlic)
Light soy sauce and pepper to taste
Oil
Heat a little oil in frying pan. Put in the garlic and fry till golden. Then put in the meat plus seasoning. Stir fry until meat is cooked through and sauces dried up (not too dry, though). Use as topping for salad, noodles, etc.
Variant - if you like Chinese mushrooms, soak them in hot water and slice thinly. You can add in the mushrooms just before you put in the meat. And if you like sauce, you can add some water to the meat.To thicken the sauce, mix some water with a little corn or tapioca starch and pour the mixture into the meat dish wile you are cooking. Think Pan Mee toppings:)

Sambal Ikan Bilis
Ikan bilis (as much as you like)
6 cili kering soaked and seeds removed (more if you like it really spicy)
6 shallots
1 small tomato (optional)
1 onion sliced (optional)
Gula Melaka or brown sugar (to taste but must put a little)
Asam jawa (a.k.a. asam ko) mixed with 1 tablespoon pf water
Belacan (optional - need to pan fry without oil before using)
Salt
Garnishing: Hard-boiled egg, cucumber and kacang.
Rinse ikan bilis and pat dry. Heat up oil in wok and make sure that it's hot before putting in the ikan bilis. Fry over medium heat until golden. Remove and keep in air tight container once cool.
For the sambal, blend cili kering, shallots, tomato and belacan. You can add a little water but not too much while blending. Heat some oil in wok over medium heat (you can use the leftover oil from frying ikan bilis). Pour the blended mixture and stir fry until the oil separates from the mixture (keluar minyak is the term they normally use). You must not add any water before this.
Once keluar minyak, add the gula melaka, salt and asam jawa juice to taste. If you like onions, add them to the sambal now. When the onions are soft, add in the ikan bilis, stir and turn off the fire.
Note: If you find the sambal too dry, add in the water before you put in the ikan bilis.

To be honest, I normally just agak-agk the mount of stuff to put. If you get this right, you can use the same sambal for fresh prawns, fish...etc.

Petai
Fresh Udang - shelled or squid also can
1/2 cup air asam jawa
To pound together
4 to 6 Fresh chili/if dry chili soak in hot water 1st
6 to 8 shallot
A handsful of dried prawn
belacan
Heat oil in wok. Fried pounded ingredients till fragrant. Add in Petai and prawns. Quick stir. Add in the asam jawa. Don't cook for too long or else the prawns will be over cook and harden (depends on individual preference).
Now a days i even add in asparagus.

no lah - if you like ice cubes you put lah. i am not a big fan of ice. i drink all my drinks straight up even (coke, water, OJ, rootbeer). never on the rocks. i will even pick out all the ice if the waiter brings me iced drink by accident.
so if you want to put ice in the mango strawberry smoothie, you are most welcome to do it! :D
