ok - how about more roti? :D

i made this a few weeks ago - it's called Raisin Brioche.

start out with a brioche dough that's very soft and buttery. roll into 3 long ropes:

umm... speaking of choccies... i mixed chocolates and roti! :smile-2:

what's not to like, yes?

so it's again, the brioche dough. first roll out a very long strip of dough like so:

then, comes the chocolates. semi sweet chocolate bits, 1 cup. put on the rolled out strip.

then pinch the seams together so the chocolate will stay in the bread

this bread did not last very long in the house. i loved to get it toasted enough so that the chocolate was warm and melty before i ate it. :D

well, anyways, it's not roti, but it does have chocolate. i made orange chocolate chunk cake last saturday for our dinner party. well, really, i wanted cake for my birthday so i used the dinner party as an excuse.. hehehehe

here's the cake just came out of the oven:

then, while it's warm, spoon over some orange syrup, makes the cake shiny and moist:

this is another bread: Cheddar Cheese bread. the dough is mixed with 3 cups of grated sharp cheddar cheese.

i actually couldn't eat this bread - waaaay too cheesy for me. plus the liquid in the dough was warm milk. so the dairy content of this bread was incredibly high and my lactose intolerance said NOOOOO.

however vin very much enjoyed it. :D

my turn, long time didn't take pic liau. Here's a batch of Hot Sicilian sausages, I think I didn't make them hot enough-lah, tak cukup kick to make anyone who makan scream for water. Hehehe maybe if I add some habanero?

i bought ground habanero powder the other day. maybe you can look for it dried and ground up instead of fresh - easier to measure?

Thanks Sila, it's all in the technique of stuffing and linking them. After one year and dunno how many kilos of meat, I guess I better improve... hehehe

Habanero is way too powerful I think, I'll stick to cayenne pepper at the moment-lah. hahaha:laugh:

Made pickled zucchini with some of the habanero and it was great, not too fiery but the kick and aroma was still there.:p

Boiled some chicken and Prosciutto tortellini and pour the Marinara sauce over it.......simple and nice.

1/4 cup olive oil
1 red onion, chopped
6-8 cloves of garlic, chopped
2 (28 ounce) cans of crushed tomatoes
Salt to taste
3 tablespoon chopped fresh basil

In a 3 quart saucepan, heat the olive oil over medium heat.
Add the onion and garlic and cook until golden brown (approx. 8 - 10mins).
Add the tomatoes and salt.
Bring to a boil, the cook over low heat for approx 30 mins, stirring often.
Turn off heat and add the fresh basil.

Marinara sauce is suppose to be simple and good toss over pasta.
Its a sauce that is a based for many italian recipe. Enjoy.

they not only look professional...they taste dem good too..tell u a secret, sila..this time i matilar..sure balloon up one..:crying: ..me n hubby every night have been nicely 'gasaking' fishingman's sausages..all 1.5kgs of garlic, batwurst n italian cheese...:o it was supposed to be cny gifts(me supposedly diet) to our relatives!!! :laugh:
hehe..am munching on a piece of juicy simply sausages as i speak...

actually, vin keeps quite fit and enjoys his food without guilt (unlike me!). he keeps active, runs every other day in the winter and plays sports during the summer months. unlike me, i do have to watch what i eat and work hard to lose all this crazy weight!

bread baking has become so much the norm for my weekends - i really look forward to it. i rarely bake cakes and cookies, just because i love to eat those. but i can resist the bread, and i love the whole process of bread baking - so like a chemistry experiments.

you should get back to baking! i'm sure your family would appreciate it. like i said - i really do have to make time to bake. now that i started baking cakes for vin i may have to do more of it since he very much enjoyed the cake. :D

Hahaha 100% agree, I'm at 90kg the last time I checked.:squeeze:

I like cakes but hate the icing on the typical cakes that is store bought. After makan feel one kind only-lah.

you should try those with Royal icing, the real type of icing and not those made from whipping cream.

i'm not telling how much i weigh! :p but i have been working very hard to lose weight - with exercise and portion control.

you should try those with Royal icing, the real type of icing and not those made from whipping cream.

i'm not a big fan off royal icing. i prefer buttercream.. mm mmmm. otherwise just chocolate ganache. :D

lagi roti. this is called Kolach - some kind of european festive bread.

after the dough is kneaded, then you braid into 2 long plaits. then coil the plaits and form it into like a bowl shape:

have to pat it into shape a bit so it's roundish and looks more like a bowl than like princess leia's hair. :p

toast some nuts (i had pecan halves on hand so that's what i used). press into the dough at strategic points:

these is what my parents called "mata" - give the roti some mata. :)

i actually made this bread while my parents were here last november, so they witnessed firsthand the whole process and my mum helped me make this bread. with the mata and everything. thanks, mak!

the mata is decorations so must put on the outside. although we fought over who would get the piece with the most matas.. :D

unfortunately because of the "bowl" shape, when you slice it does resemble biscotti.

this bread doesn't have a very hard crust, the inside is light, perfect when toasted with butter.

i have made some heavy breads too - depends on the recipe lah. for me, it's always a surprise whether the texture is heavy or not. also, if it is whole wheat flour, the texture does tend to be heavier and denser just because of the whole grain and the gluten interaction with the yeast is less active (i think lah).

hmm ..thats one thing that canberra don't have.. asian bakeries.. like the sausage rolls, sardine bun, mexican bun, cheese bread and diffferent buns from ching tong..

the buns at the bakeries here are always dry and heavy.. not like the ones in malaysia. :sad-2:

she's very much keeping us occupied and laughing so hard at her cute little antics. very loving and gentle little kitty. she also looks like one of vin's ex-cats, whose name was Billy, except he had green eyes. so now we got Billy, Lily, and Giselle who look alike!

back to roti. this is called Pain de Campagne Honfleur - a french whole wheat bread.

start out with a starter ball of dough:

let it rise at least overnight (24 hours is better), at room temperature. the dough will rise and bubble like mad:

CNY BBQed lamb shoulder. Marinated 2 days with seasalt, black pepper, garlic and rosemary. Turned out good, got another shoulder sitting in my freezer waiting to go as well. hehehe

You want the recipe? I think you can easily get lamb shoulder from the meat shop near koping. If I'm not mistaken the name is Moh Kee or something like that.

:laugh: Me also but if I don't do it nobody will. So no choice-laa. Preparation is easy but the grilling takes a long time. It'll be easier if you have an oven where you can bake the shoulders for sometime then only finish it off by grilling over charcoal and some woodchips if available. yummy!

I would've gotten a lamb shank but that one dem expensive-lah. Double the price of shoulder and usually come in about 4-5kg each. So one shank could cost about Rm100+. That shoulder cost only Rm40, cheap-leh... plus got a few ribs to lick clean after that. I just love picking on a piece of rib.
I bought some mint jelly to go with the lamb, didn't have the ingredients to make mint sauce since it's CNY and all the shops are closed. But still good anyway.

Dunno how long it'll last-lah, I always finish them in a couple of weeks.

Recipe simple only, at least my style-laa.
1. few pieces of zucchini (locally known as japanese cucumber)
2. White rice vinegar
3. Sugar
4. 2-3 Habaneros (depending on how hot you want them)
5. 2 onions
6. Salt ( I use rock salt)
Method
1. Slice the zucchini slightly thick for more crunch.
2. Add in 3-4 tablespoons of salt to dehydrate the zucchinis and leave for 30-45 minutes.
3. Wash out the salt and drain away the water.
4. In a mixing bowl, add the vinegar and sugar and chopped up habaneros or any other type of chilis and mix well to dissolve the sugar.
5. Fill them into those glass bottles and leave for 2-3 days in the fridge to mature, then hamtam. Keep extras in the fridge unless you want to make zucchini beer. Hahaha

First ate them in Cameron Highlands and had them with roast meats like roast chicken, lamb chop etc.
But at home I eat them with almost everything-laa. Even stuffed into a bun with sausages or even burgers. :p

WW, have u tried making smoothie out of the frozen strawberries? I used to do that. Add in a bit of Peel fresh mango juice or honey, blend it up till it becomes ice smoothie. Nice and refreshing!:smile-2:

Here are the instructions i got from her.......i am sure she won't mind.



Ingredients
Koor-Ruu(whatever amount you have)
Garlic(3-4 cloves,chop fine)
Shallots(3-4,slice fine)
Ginger(Thumb size,chop fine)
1-2 pieces chicken fillet(cut into little cubed,about half and inch cubes,marinate with some soya sauce and pepper)
Black Chinese mushroom(3-4,soak and slice thinlly into strips)
Clouds ears/Mok yee(same as the mushrooms)
Young bamboo shoot(slice into strips)
Carrots(slice into strips)
-all the 4 above should be strips of about the same size and length
Kampung Koh Chilli sauce(half to one bottle,depending on how "lak"you want it to be)
<-alternatively,if you cant get this,pound some red chilli and some chilli padi and use it as a substitute.This will mean that you need a lot more lime juice and vinegar.>
Lime juice/Vinegar(amount depends on how "suong"you want it)
Salt (to taste)
Sugar(to taste)
2 eggs(beaten)
Cornflour and some water(for thickening)

Method
1.Chop the Kor-ruu into chunks approx 4mmX4mm.(You will need a chopper to do this,you may get bits flying around but as long as you get the chunks ,you are ok)
2.Heat oil in kuali and deep fry the pieces of Kor-ruu 3-4 pieces at a time.You have to turn down the flame so that you dont get them over-browned.Keep turning them while you fry and remove and drip off the oil when it is golden brown(the colour of light brown bread crust)
3.Dunk the fried Kor-ruu into a basin of water and let it soak for a while.It will become soft and spongy.Remove and squeeze dry.Set aside.
-you can do no1 to no3 earlier.
4.Now you are ready to cook!! Saute the garlic,shallots and ginger in some oil will light brown and aromatic,throw in the chicken,mushrooms,clouds ears ,bamboo shoot and carrots.Squirt some soya sauce in and stir fry on high flame.
5.Put in the Kor-ruu and stir fry briskly.Pour in 2-3 rice bowls of water(actually it you like it soupy,you add more water but it you like it thick,then put enough to just cover the ingredients).Bring to a boil.
6.Pour in the chilli sauce,add lime juice,salt and sugar to taste.Remember,a good Kor-Ruu has to be "extreme" in its taste ie spicy and tangy.
7.Boil for 2 minutes,drizzle the beaten eggs into the boiling soup.Give it a quick stir .Then thicken with some cornflour mix.
8.Dish out and garnish with the chinese celery.
9.Bon appetit!!

Fish Maw

The dried stomach lining of large fish. The term refers to the air bladder (also called swim bladder) that is found in all fish except sharks and rays. The maw we buy is usually from the conger pike and its role is to add texture to a dish. It might sound off-putting but it has no fishy taste. The cleaned maw is dried and then deep fried to make it puff and expand. In this state it will keep indefinitely.

Before it can be eaten, it must first be soaked in water for a few hours, weighted down by a plate. Smaller after soaking, the maw is wrung out and then washed in vinegared water to remove any trace of fishiness. Once again squeezed dry, the maw is cut into fine strips, ready to add to a dish. The maw in itself is a texture ingredient only, and is used with other strongly flavoured ingredients to make it interesting. It usually requires only a couple of minutes cooking to absorb the flavours in the pot.

Once you do it.....very easy.....kacang putih.....:amused:
Only advice i will give you is.....control the heat when deep frying the Koor Ruu.....it goes black in seconds if fire is too hot.

mona - just keep playing with it. the breads i'm able to make these days i would say, the inside is just as fluffy as the store-bought ones (at the bakery lah). and depending on the kind of bread, if it's supposed to be a crusty bread, these days it turns out to be a nice crust. i'm learning a lot out of just continually trying out new recipes and flipping through different books :)

this was actually a very nice bread, a bit tangy from the yogurt, but quite light. very nice when toasted (brought out the mint and the lemon) and i quite enjoyed it with orange marmalade.

kekekee i'm way too lazy to use basmati (have to soak and what all) i just use the regular jasmine long grain rice.

here's my saffron rice recipe:

Ingredients:
* onions, diced
* 1 cinnamon stick
* 5-7 cardamom pods
* 2-3 cloves
* some cumin seeds
* 1 bay leaf
* a bit of coriander seed
* 1 star anise
* beras jasmine
* enough liquid to cook the rice (chicken or veggie broth is best)
* 1 pinch of saffron

first saute all the spices (except saffron) and the onion until onions wilted and it's all very wangi. you can use ghee to sautee but these days i use olive oil for health reasons. taste just as good. then put in the rice and let that sautee up and get coated in the spice-flavored oil. then only put in the liquid (since i use jasmine rice, it's the basic rice to liquid ratio - whatever you're used to doing). when the liquid starts to boil, put in the saffron, and a bit of garam (not much garam if you use broth and not water). kacau kacau, then turn the fire to as low as the stove will go, put a tight lid on the pot, and let the rice cook. voila.

it was quite fluffy and nice! can't believe one whole cup of mashed potatoes went in there!

next i tried a recipe from the lovely books lilian sent me for my birthday. it's not bread, but it's a lemon bar. i added the chocolate topping (not in the recipe in the book) since i love chocolate.

first a cookie-like layer is made and baked. then the lemon custard goes on top like so:

Hello to all in here.....Mmmmm sila... my mouth is really pouring all over..... Ahhhhhh..... really good breads... so can courier some to K.L ke..?

anyway... just to let all of you that's i was away for some work related matters... tht's why was away.. for sometime agao...

being away for such a long time.... mis home cooking and also.... the wonderfull smell of nature... i meant my garden... hehehehe

omg, i can't believe it's been so long since i did any bread posts. ok, this one is called Sage and Celery Bread - filled with dried sage and celery seeds. had a beautiful taste and the odor while baking was heavenly.

well i am was away for sometime and was not in action for a while.... work load as usual....

anyway... just to let u know all know... tht... i am back in action and would be surprising all with more and more news.... hahahahah
