Yesterday I realized that cooking at home can really really save a lot. For example if kids want McD nuggets, I go Giant buy 1kg of Ayamas nuggets. (McD 4.99 for 6 pieces - Giant 10.90 for 1kg) So I save roughly RM8.00. kekkeke...
SJ, you don't wanna know what's in those nuggets do you?
Just imagine, how much does 1kg of meat cost. Add in processing, transport, marketing, packaging and other overheads, can they sell it to you at RM10.90 and still make a profit?:laugh:
Fillers and extenders cost much less than meat.

The problem is we don't really have a good high quality nugget in the market-laa. Like I said, meat is expensive so how to sell at such low price? If they make a really good quality nugget, I would expect the price to range at least between RM30-RM40.

That's true...McD nugget and ayamas nugget different ingredient. I prefer McD one, got more bite.... don't like the ayamas but my elder son prefer ayamas chrispy nugget.

Comparing the pre-pack sausages and nuggets and ham like ayamas with the fresh ones where we buy from the sausage counter in supermarkets like Jusco, the fresh ones are much more expensive. Quality-wise, is it better and healthier? What about comparing the imported pre-pack and locl pre-pack ones?

That's true. In ayamas you hardly find any chicken meat. And the amount of preservative and artificial flavoring and coloring also different.

errr.... actually i meant there is no good quality meat in either of those.... they are made of composite ingredients and just taste good - that's why even tho we know they are JUNK food we still go for it!

Exactly, then you know exactly what goes into it. No junk and parts that the butcher cannot sell. My sis in law is studying to be a vet so she was posted to some poultry farms and etc, she came back and said don't eat all those stuff as well.
hint - what do you think happens all those injured, deformed of stunted chicks?
to be honest, I need at least 900 grams or more of chicken meat to make 1kg of sausage. The rest are spices, salt and other binding ingredient for the texture.
So how does ayamas give you 1kg of nugget for RM10.90? hehehe
So as Song said, "make your own-lor..."
By the way, I think McD nuggets are some of the better nuggets around.:p

A normal fresh sausage (uncooked) has a shelf life of 2-3 days but if you add preservatives you can extend it by a couple days. If they're not to be eaten within 2-3 days you can freeze them and they can last for up to 3 months before they start to loose their flavor gradually. Not very sure what they use but I think it's phophates as you can see that the colour of the sausages are very pinkish and 'fresh' looking. That's phophates at work.:)

OIC, that means 2-3 days at room temp. So advisable to put in the freezer immediately unless i want to eat it the next morning, rite?
Hmm...let me check whether too much phospate bad for health.

If you're referring to fresh sausages not dried ones, it's 2-3 days in the fridge with temp of below 4 C and not room temp. 2-3 days in room temp and you'll have a rotten sausage. If you want to eat it soon as in 1-2 days time, you can do by not freezing it, but anytime longer it's best to chuck it in the freezer when you reach home.:p

it again depends on which type of sausage you're buying. Sausages are basically divided into 2 types, cooked and uncooked. A fresh sausage falls under uncooked whereas a frank like those sold by ayamas is a cooked sausage.
the typical way to cook a fresh sausage is to boil it first (5-6 mins depending on what meat) to cook the meat, followed by pan frying or grilling or whichever creative way you can think of. Some sausages like brats are simmered in beer before grilling over charcoal fire. yum yum:p

I'm still very new in this area so still veli limited knowledge ok... but I've learned lots since I started this sausage project. I've yet to charcoal grill or BBQ any or my sausages, always pan fry, masuk oven or cooked with pasta.
Was told that collagen casings are very suitable for BBQ grilling, maybe can make a batch to try. Any one wanna organise?

there are 2 types...one is less fatty, don get the streak bacon....hey, u can grill them and the oil will come ozing out...then makan lorr....
I prefer ham anytime.
i prefer salami.....but bacon is the best...esp with baked beans, sunny side up and toast...and of course hot coffee.......

This is how I like to do mine. Wrap the bacon around asparagus. Fried them in little olive oil. Nice!!!!
Take bacon....line them up in paper towel....put in microwave for 3 mins....damn crispy and nice...

and then use chicken fillet and wrap those up with a chunk of butter, then sapu bread crumbs on the outside and deep fry it.... :D what u have is chicken kiev ala zazu :)

The main spice in the Italian sausages (actually it's Sweet Italian Sausage) is fennel and black pepper. There are other spices in there as well like oregano, caraway seed, paprika etc. have to refer back to the recipe to remember all the spices in it.:p

My sausage business is Simply Sausage and I'm selling to a cafe and some friends etc. Chris got them coz my parents came to KL last week and took it back to Sitiawan for her. She ordered them about 1 week back.:p

Tat cafe not doing a good job in selling them actually (onli took 2 types of sausages and not much also). Wait a couple of weeks more and I probably have a newly opened cafe selling them. Should be a wider range of sausages. I talked to the chef last thursday and they were very interested, they only opened their cafe yesterday if not mistaken. Will inform if got any updates.:p

That's why I volunteer my house every time he wants to prepare his sausages for photo shoot. After the shoot get to eat all those sausages. If I remember correctly, between the 6 of us, we finished 1.5kg of sausages. Yum.

I priced them about 75% of Mr Ho's Fine Foods price for fresh sausages and about 65% of their price for cheese sausage. That's the starting price-lah, but I've kinda revised the price upwards for the new cafes that I sell to.

Waiting for rum(bacardi) to come from Labuan, hopefully by the end of next week. Tried with wiskey alreadi and not too bad.
Actually I've not yet BBQ my sausages with charcoal fire and still waiting to give it a go soon. Will let you know the results. I guess I gotta use hog casing for BBQ, emmmmmmmm, hungry liau.:p

Quite a few recipes calls for wine actually, especially those Italian sausages. But me not yet use wine-lah. Maybe when I make them in batches of 50kg.

ppl are selling more sausage meals these days. cafe are including sausage only meals in their menus, and got 1 fella selling at hawker center 1 sausage with potato and beans for like RM7.90. got quite a lot of ppl eat also leh. not a bad idea for a business. maybe i should try those that you make and see if can sell in Penang or not. :)

RM7.90 is quite cheap but then again it all depends on what type of sausage they're using. There is a cafe selling my sausage at RM7.00 for one sausage onli. It's a 6 inch chicken sausage in hog casing. About 100grams each sausage.

NO-lah, me still very new to the industry. Just know a bit onli-lah. But what I know I share share-mah. I hope can become millionaire also by selling sausage but a bit hard-lah unless I go really big.:laugh:
