siewjang - we continue here. i totally lost track of the number of posts in that thread...sorry dino :o
yeah the cleanup part is dem painful too! poor siewjang. definitely pan fry produce nice and crispy stuff but non-stick is important lah. and patience, because the nonstick pan you must be careful and not get it too hot like a normal wok. so wait until the pan is nice and warm, and always warm it up with oil in it - don't warm it up kering. do a bit of testing. yesterday i pan fried some scallops and i did a small one first just to get the non-stick pan nice and warm. i breaded it before i pan fried it - and the first one was a bit iffy, but the others were fine after that. got the temperature of the pan perfect after the first one. (the first one tak cantik, so masuk my mulut lah!) :D

Whao! Such an expensive food i wouldn't pan fried them. If scallop, I'll like to cook them with sweet peas the cantonese way.
Wah, didn't know non-stick pan has to play with the temperature too.
yah - the first one is always not cantik one even in non-stick...after that usually ok. i breaded the scallops and added garlic powder and parsley in the breading, then roll the scallops in it. pan fry with extra virgin olive oil and butter mixture. 2 minutes on each side. serve warm. vin really likes that.
how to make cantonese style? i dunno lah? got recipe ah? :o

Cantonese style - make the gravy starchy and a quick stir with egg white. Go figure it out ;) .

ahjang, a bit odd lar you have pan fried fish but with mashed potatoes... shouldn't it be chips?
the tin foil wrapped fish would be a bit like steamed fish... but very nice and succulent...
actually another one you can try, especially if you can get firm flesh fish like monkfish...
or if you want to splurge, by getting scallops...
wrap it up with prosciutto or bacon (sorry, tak halal this dish) and grilled it...
the sauce... errr... forget what's in the sauce... i'll check at home tonight, ok... :)
and cooking fish on pan, always use non stick pan...
if using non non-stick pan, then must make sure oil is very well heated....
(or at least that's what my gramps told me... i've never tried so dunno also...)

I'll take a pic the next time I dine in TGIF. Actually trying to copy their recipie. They pan fried the fish, serve with a slice of lemon, pan fried veges and mashed potatoes. Yummy. This time have to use non-stick pan :o .

ok so last night i baked Banana-Pecan bread, which is ho-hum now since you've seen many pictures of it. but also i baked Rosemary-Garlic bread. first time ever.

it's pretty garlicky already ;) we had it warm with butter and vin was very happy with that. but garlic cream cheese could take it to the next level!!

thanks, guys :) i do it cause it's therapeutic, and plus vin really likes bread. :D now he gets to eat a variety of it and all home made, so no preservatives and whatnot.
actually i volunteered to bring a selection of breads for vin's departmental christmas party - so this might get complicated!! :D

as to the breadmaker question, i think you can make quite a few of these using the breadmaker, and it's a lot less hassle. but you can't vary the shapes of the bread (no long baguettes, or round loaves, but just the standard). actually i know a lot of people who are happy with the breadmaker since you get nice fresh bread without going through the hassle of baking bread from scratch. one guys says he has it on a timer, and times it to finish baking when his family is waking up for breakfast. that sounds nice and convenient, doesn't it??

so on wednesday night (i was home, since thursday and friday are the thanksgiving holiday), i was lazy to make too big a meal, since i was making thanksgiving turkey the next day. so we had meatloaf..

you make thanksgiving look really easy!
it was actually stress free. the turkey baked for about 3 hours and 45 minutes (13 pound turkey, plus stuffing inside of it), and was basted roughly every 25 minutes. vin took care of most of the basting. about an hour before it came out, i turned the roasting pan because the inside half was getting browner than the outside half, so it browned evenly. actually quite low maintenance, given that in between basting every 25 minutes you can make side dishes, shower, clean the house, etc. :D
the menu was:
* roast turkey
* stuffing
* garlic and thyme mashed potatoes
* gravy (made after the turkey was done, using the pan drippings)
* raisin-orange bread
* apple crisp
* Sweet potato casserole
* cranberry-orange relish
* pecan pie
* steamed veggies
my guest brought the last 4 items.

but I read somewhere it needed only 45 mins to 1 hr of baking :confused: . Maybe it depends on the size of the bird.

A normal 15lbs bird takes about 1 1/2 to 2 hours if its baked without anything stuffed into it. So if you stuffed the inside of the bird full of stuff, it's gonna take longer.....

wow! that food looked incredible! i'm so hungry. been really good with my food the last few months. i haven't eaten fast food, chips, sweets, chocolates for a few months now...so hungry at the moment. just about to go to gym after work and i had an apple. didn't really help...

yah - plus you have to reduce the temperature and cook the turkey slowly while basting, otherwise it gets all tough and dry (ugh!). and vin likes the stuffing to be in the turkey (some people make the stuffing on the stove separately) so must add that to the cooking time. it was at 425 F for 30 minutes, then 325 for the other 3 hours plus. 325 is a fairly low temperature, about 145 C i think? and since turkey is poultry, have to make sure it's cooked through takut our friend salmonella come and participate at the thanksgiving table ;)

roast turkey should be fine though, shouldn't it? the apple crisp itself is healthy - the filling is something like 8-10 green apples, peeled, cored and diced, add a tablespoon of flour and a tablespoon of sugar, and a bit of nutmeg and cinnamon. the topping not that healthy lah - brown sugar, regular sugar, flour, oatmeal, chopped hazelnuts and butter. :D i added oatmeal and nuts to the recipe to give it more crunch and not to mention it makes me feel healthier to have nuts and oatmeal... hehehehhee

I promised some where in the Forum that I will try to share some of the recipes. Sorry for the delay as this had taken ages to type it out. Here is one of them.
ULTIMATE CAKEY BROWNIES
These cake-like brownies have a slightly fluffy texture and a great chocolate flavor.
Preparation 15 min.
Baking 23 min.
Ingredients:
• 3 ounces unsweetened baking chocolate
• ¼ cup butter, softened
• 3/4 cup sugar
• 2 eggs
• 1/4 cup milk
• 1 tablespoon light corn syrup
• 1 teaspoon vanilla
• 1/2 cup all-purpose flour
• 1/2 teaspoon baking powder
Instructions:
Heat oven to 350°F. Grease bottom only of 8-inch square baking pan. Set aside.
Place chocolate in small microwave-safe bowl. Microwave on MEDIUM (50%) power 1 minute. Stir; continue microwaving, stirring at one minute intervals, until chocolate is melted and smooth (2 to 3 minutes). Set aside.
Place butter in large bowl. Beat butter with wire whisk until soft and creamy; add sugar. Continue beating until well mixed. Add eggs, one at a time, beating well after each addition. Add milk, corn syrup and vanilla. Beat until well mixed. Add melted chocolate; continue beating until well mixed.
Stir in flour and baking powder until well mixed. Pour brownie mixture into prepared pan. Spread mixture evenly in pan. Bake for 23 to 30 minutes or until toothpick inserted in center comes out clean. (DO NOT OVER-BAKE.) Cool completely.
TIP: To melt chocolate on stove-top, place chocolate in 1-quart saucepan. Cook over low heat, stirring constantly, until chocolate is melted and smooth (1 to 2 minutes). Remove from heat; cool slightly.
TIP: To substitute unsweetened cocoa for unsweetened baking chocolate, use 3 tablespoons unsweetened cocoa plus 1 tablespoon butter for each ounce of unsweetened baking chocolate.
TIP: Reduce baking temperature by 25°F if using dark or nonstick baking pan.
TIP: To prepare brownies in 13x9-inch baking pan, double all ingredients. Bake for 30 to 35 minutes or until toothpick inserted in center comes out clean.
TIP: For tenderest brownies, stir brownie mixture only until smooth; do not over-mix.
VARIATIONS:
Flavored: Substitute 1 teaspoon extract or flavoring (mint, almond, etc.) for the vanilla.
Stir-ins: One-half cup of stir-ins (nuts, baking chips, toffee bits, etc.) may be stirred into brownie mixture before baking.
Topping: Sprinkle cooled brownies with powdered sugar or frost with Chocolate Buttercream Frosting.
Yield: 16 brownies

Bran Flakes Muffins with Raisins
Ingredients
1 cup bran flakes cereal with raisins
3/4 cup milk
1 egg
1/4 cup shortening
1 cup all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup white sugar
Directions
Preheat oven to 400 degrees F (200 degrees C). Lightly grease 12 muffin cups
Combine raisin bran cereal and milk. Let stand until mixture is moistened. Beat in egg and shortening. Mix in flour, baking powder, salt and sugar, stirring only until combined. Fill greased muffin pans 2/3 full.
Bake in preheated oven for 30 minutes, until toothpick inserted into center of a muffin comes out clean.

BUTTER COOKIES
These crisp, tender, buttery cut-out cookies can be decorated to capture the spirit of the holiday season.
Preparation 1 hrs.
Baking 6 min.
Chilling 2 hrs.
Cooling 15 min.
Cookie Ingredients:
1 cup Bonlac Butter, softened
1 cup sugar
1 egg
2 1/2 cups all-purpose flour
2 tablespoons orange juice
1 tablespoon vanilla
1 teaspoon baking powder
Frosting Instructions:
Frosting Ingredients:
3 cups powdered sugar
1 teaspoon vanilla
1/3 cup Bonlac Butter, softened
1 to 2 tablespoons milk
Combine 1 cup butter, sugar and egg in large mixer bowl. Beat at medium speed, scraping bowl often, until creamy (1 to 2 minutes). Add flour, orange juice, vanilla and baking powder. Reduce speed to low; beat until well mixed (1 to 2 minutes).
Divide dough into thirds; wrap in plastic food wrap. Refrigerate until firm (2 to 3 hours).
Heat oven to 400°F. Roll out dough on lightly floured surface, one-third at a time (keeping remaining dough refrigerated), to 1/8 to 1/4-inch thickness. Cut with 2-inch cookie cutters. Place 1 inch apart on ungreased cookie sheets. Bake for 6 to 10 minutes or until edges are lightly browned. Cool completely.
Combine powdered sugar, 1/3 cup butter and 1 teaspoon vanilla in small mixer bowl. Beat at low speed, scraping bowl often and adding enough milk for desired spreading consistency. Tint frosting with food color, if desired. Frost and decorate cooled cookies as desired.
Yield: 3 dozen cookies

talk about brownies, this is one great recipe that i tried out recently... and everyone loves it!
very rich with chocolate, not too sweet, and easy to make...
200g dark chocolate (good quality ones)
200g butter
200g dark brown sugar
4 eggs
a rounded tbspn of flour
1. heat the oven to 180C and line a brownie pan
2. melt chocolate and butter together using bain-marie
3. remove from heat and let cool a little
4. add in sugar and mix well
5. add egg one at a time and mix well
6. finally add flour in
7. pour into brownie pan and bake for 30-35 mins
8. cool and cut into squares
9. best serve with ice cream... yumm...
My dinner tonight. Chicken Cacciatore with speghetti on the side.

god, makes me hungry.... and hmm... sila must be busy, tak nampak bayang for a few days liao...
sorry guys - been a very busy couple of days. yesterday i woke up and then baked 4 loafs of bread to bring to vin's faculty christmas dinner. last loaf came out of the oven, i showered and got dressed, then we went to dinner, and came back after 11. by then i had been on my feet all day so i was tired, so we went to bed. this morning still feeling sleepy lah :D
dino your chicken cacciatore and spaghetti looks deeeelicious.. you make one ah?
how bout i start with last week's cooking first. on sunday last week, i made rendang.
first you tumis a bunch of blended herbs and spices:

next steps are to salt pepper, and let it cook until nice and thick.
i made nasi lemak and also Pain d'Ail (garlic bread) with cloves of garlic, blanched and then tumbuked and added to the dough. also on the side i made garlic herb butter - blanched cloves of garlic then are crushed in with softened butter, added black pepper and parsley.

me definitely like that - my problem is i always mess with the recipe. can't follow it to the tee - it's a wonder any of my breads turn out at all!! substitute this for that, etc. hehehehhee
but as to normal cooking, i was my mother's sous chef for a long time, cutting peeling washing stirring, and she never measured anything. so i also like that lah... :laugh:

i would call that a case of being lucky! if i knew somebody who would make me curry that tasted like my mother's i would never make it myself!! heheehehehehehehe.... for me it's a case of desperation being the mother of invention! although now that i've started cooking all kinds of international styles, i find i love being in the kitchen and making stuff for the people i love.

so now, i can cook more european food and bake better than i cook asian food....
a bit sad though... should really learn...
that's nice, isn't it, somebody asking you what you want? hehehehe.. i milk it for every moment i can - sometimes i plan the menu for my mum for days!! :D
i actually cook asian food pretty rarely now - sometimes it's faster to make ang moh food. asian food can be a bit remeh - plus all the stir fry smells up the house and the clothes.. :D but i do love the bread baking though - it's so therapeutic and fun...
yesterday i had to take a 45 minute break - the mixer overheated and stopped working. had to let it rest and cool down... :squeeze:

This is what I've whipped up for Pre-Christmas eve at Siewhaw & Crackjet house.
The Roast Chicken (ok, a little dissapointed right? It's a working day (Friday) and I don't have enough time for the turkey who needed 3 hours to be tanned. haha)

Stuffing - The chicken stuffing - Chestnut, gingko, carrot, black & button mushroom. (I've got Sila's recipie but think I'll better stick to mine just incase I blown it on this occasion. haha. I'll experiment it other day. Thanks Sila)
If you want good stuffing, get this one.....its pretty good stuffin, to add zing to it, put in some bacon bits...yum.....

The roast chicken left about 20%. The next day, I heat up and eat for lunch. This time using all my 5 fingers. Dem lipsmaking yummy i tell you. Plus all the gravy. Wahliao, drooling again.

Its basically....you cook the potato(bake),cut to half,scoop out the inside....make mash potato out of it....season with butter,some sour cream,salt and pepper then put it back to the potato with cheese(bacon bits optional) in the middle, sprinkle some paprika and chives and baked it for about 45 mins again.

to get it to that colour, first,your egg must be quite fresh. try using those omega-3 eggs....and beat up nice...then fry them over low flame!

No colouring in those eggs. I jamin one coz I cooked them myself. Those are kampung chicken eggs, that's why so yellowish one. Try and see for yourself.

Mashed potatoes sound good but too lazy to make them. I actually had them for dinner last night, just cook the sausages (8 minutes) and prepare the egg, take out peel fresh juice, toast and beans at the same time. Express dinner ready-liau. Eat until cannot jalan.yum yum :p

ahjang, olive bread are delicious.. it won't be salty if you're not using olive stored in brine..
should look for olive stored in olive oil or sunflower oil... some are even seasoned... :)

siewjang - lil is right, got all kinds of olives. but vin likes olives and so he did enjoy the olive loaf. as to me, i picked out the olives. i like the flavor but i don't really like to bite into a big piece of olive... ;)

Just wondering if the crust is hard....since it looks so dark. When wiffy bakes the wholemeal bread, the crust turns out to be shinning.

the crust is shining if you brush some egg wash on it or something like that - my challah bread turned out like that. but some of the bread dough ends up being very dark and quite crusty - usually if when baking it you put a small pan of water below it for steam effect during the baking process. it actually makes the crust quite crisp and a little hard - like some french/italian breads. heehehehehehe (well, this is all according to my bread book lah - i follow recipe only hor...) ;)

next i tried my hand at California Sourdough Whole Wheat bread.
start of with a "sponge" that you let sour for 3 days, stirring it once a day:

yep - that's ink leaked on his shirt! the ink leaked probably 1-2 years ago, still cannot come out so he only wears the shirt at home :D
it's called 30 minute white bread because that's how long the bread takes to rise before it's baked (only rises once, usually at least twice it rises) :D although i think vin finished half the loaf in 30 minutes...hehehehehehehee
