i agree - well mannered kids are fun to play with. when they start tantrumming, i bagi balik to the parents.. :o

Dino
02-13-2006, 11:18 PM
I kena once, a kid kick my feet because i told him not to push other kids. Since it was on the second floor, felt like tossing that kid out the window and let gravity take care of him. Some-more in Sunday School and parents were one of the high-profile members. If you ask me, the kid is spoiled rotten!!

Sila
02-14-2006, 01:27 AM
not being a parent yet, i know it's easy for me to say, but goodness, kicking an adult for disciplining them does not sound at all acceptable to me! i would be more than tempted to kick right back... :squeeze:

i've met some kids that are just simply overindulged and run wild like monkeys, god forbid anybody says no to them. but i've also met some very beautifully mannered children (not to say they don't get rowdy and playful) but they shake hands and greet you politely, and play with you, but understand the limit and what the word "No" means. sad to say, the latter type seems rare these days, such that vin and i will remark on the well behaved kids.

It has been a while since I last whip up a good meal. And since last weekend is the chap goh meh, siewhaw and me had a small makan-makan. This is my all time favourite - Chicken Wing stuff Mixed Vege

Chicken Wing (debone)
Mixed Vege (green pea, corn & carrot)
Black mushroom, soak and dice cube
Prawns dice cube
egg and seasoned flour for coating

Stir fried the vege. Since I don't have mixed vege, I substitue with cabbage and no prawns:(

Seasoning

ok back to roti!! last weekend i experimented with a new bread. it is called Onion Lovers' bread and was pretty cool. this bread has filling.

ini filling (chopped onions, melted butter, paprika, salt, pepper stir together):
http://img.photobucket.com/albums/v111/sjamalludin/IMG_1555a.jpg

then you uli the dough and let it rise. then you punch it down, roll it into a rectangle roughly 12 x 18 inches, then cut into 3 strips lengthwise:
http://img.photobucket.com/albums/v111/sjamalludin/IMG_1560a.jpg

then for each strip, place the filling but make sure got about 1/2 inch of clear dough around each edge:
http://img.photobucket.com/albums/v111/sjamalludin/IMG_1562a.jpg

http://img.photobucket.com/albums/v111/sjamalludin/IMG_1563a.jpg

ahjang - vin took these pictures and then he cabut liao!!

Sila
02-18-2006, 07:16 AM
after the filling is placed, then each strip you gulung and pinch the edges shut tight:
http://img.photobucket.com/albums/v111/sjamalludin/IMG_1564a.jpg

taruh on baking sheet:
http://img.photobucket.com/albums/v111/sjamalludin/IMG_1565a.jpg

plait like plaiting hair:
http://img.photobucket.com/albums/v111/sjamalludin/IMG_1566a.jpg

Sila
02-18-2006, 07:20 AM
let the bread rise for a bit:
http://img.photobucket.com/albums/v111/sjamalludin/IMG_1567a.jpg

this one i copy lilian (she always has cool camera angles):
http://img.photobucket.com/albums/v111/sjamalludin/IMG_1570a.jpg

then throw it in the oven to bake, come out look like this:
http://img.photobucket.com/albums/v111/sjamalludin/IMG_1571a.jpg

when sliced, here's what it looks like:
http://img.photobucket.com/albums/v111/sjamalludin/IMG_1574a.jpg

basically the further into the bread, the nicer the ratio of filling to bread is. it actually reminded me of a very mild sambal filled bread.

vin really loved this bread! i think i ate maybe 2-3 slices in total, and he demolished the rest!

Sila
02-18-2006, 07:27 AM
and just for kicks, our homemade (sila-made) valentine's day dinner. i made basically vin's favorite stuff because he surprised me with a card and Baci and Perugina chocolates (mmmmmmmm).

vin's plate (2 grilled lamb shoulder chops at the top, dabbed with some pesto sauce, onion lover's bread with garlic butter, sauteed veggies (mushroom, onion, green pepper) and garlic fries:
http://img.photobucket.com/albums/v111/sjamalludin/IMG_1575a.jpg

side view of vin's plate:
http://img.photobucket.com/albums/v111/sjamalludin/IMG_1576a.jpg

my plate (clockwise from top: garlic fries, lamb shoulder chop + dab of pesto, slice of bread & garlic butter, mixed veggies under the bread):
http://img.photobucket.com/albums/v111/sjamalludin/IMG_1577a.jpg

side view of my plate:

and last but not least, dessert. i found a recipe for Molten Chocolate Cake on Foodnetwork.com, so i even made dessert that night! the molten chocolate cake is the kind where when you cut into the cake, chocolate comes oooooozing out.

top view of my plate, you can see the chocolate starting to bubble out already, served with a side of vanilla ice cream (didn't get my act together to whip cream):
http://img.photobucket.com/albums/v111/sjamalludin/IMG_1579a.jpg

side view:
http://img.photobucket.com/albums/v111/sjamalludin/IMG_1581a.jpg

vin's plate - he smothered his cake with ice cream!
http://img.photobucket.com/albums/v111/sjamalludin/IMG_1582a.jpg

then when you cut into the cake, here's what you get:

How about hand pressure?? Does that matter? and does it make any difference to the size and elongation of the sausage??

I think you've got things wrong already, the sausages are basically meat mixture stuffed into a casing/skin then twisted off to form links.
This is a pic of a long sausage after stuffing. It's about 3 meters + long.
http://i3.photobucket.com/albums/y93/wwyeoh/IMG_1084.jpg
This is the end product after linking them. What I need to do is pinch the long sausage and twist to form the link. So I can link them any length I want actually.

Thanks, it's kinda hard for me to make real 'halal' sausages due to the many rules that at this moment cannot be fulfilled by mua. I do make pork free sausages but still not considered halal. Another main reason is because all natural casings are considered non-halal by the gomen now. But I do believe there are halal certified natural casings in other countries.:p

sorry for the long hiatus, folks - busy lah. i took pictures but got no time to post. so here, is a long story of how to make Pesto Bread.

first after you uli the dough you roll it out big and start spreading pesto (basil, pinenuts, olive oil, cheese):
http://img.photobucket.com/albums/v111/sjamalludin/IMG_1596a.jpg

spread over the whole thing except for leave room on the edges:
http://img.photobucket.com/albums/v111/sjamalludin/IMG_1600a.jpg

then roll the dough inwards:

rolling rolling rolling...

chris - don't lah bite the monitor...after your daughter have to drive you to hospital and what will she explain to the doctor? "Doctor, my mother decided to bite the computer monitor...", we don't want to put her through that!! :D

lilian - the nails are au naturel! no product - i rarely use any polish (because tak telap air and in islam we believe in water cleansing all parts of the body) if i do put on nail polish it's only for special days and i take it off very quickly. lazy lah... besides after it all looks chipped and ugly ;)

at least this way you guys know my hands and fingernails are clean when i handle the dough, right?? can see my fingernails - no dirt underneath..

i will do my best to bring some home made bread, k? have to make something that will tahan lasak a bit to bring.. :smile-2:

well, since i've been procrastinating my work, why not put up some more roti pictures, right? :squeeze:

this is called Molasses Wheat Bread, using molasses and whole wheat flour. start out after uli and first rising, you roll it into a long log and kasi rest a few minutes:
http://img.photobucket.com/albums/v111/sjamalludin/IMG_1728a.jpg

then you twist the long log into a cute little twist, drop in a loaf pan for the 2nd rising. this picture is after the 2nd rising:
http://img.photobucket.com/albums/v111/sjamalludin/IMG_1730a.jpg

after a turn in the oven, out comes our Molasses Wheat loaf:
http://img.photobucket.com/albums/v111/sjamalludin/IMG_1732a.jpg

Sila

also i made a huge discovery (well, for me it was huge). there is a fish here you can buy it's called Skate. sejibik macam our Ikan Pari!!! this was the first time i tried it and i wasn't sure whether the inside of the fish look/taste/feel like ikan pari or not, so i just cooked it ang moh mediterranean style, breaded, pan fried with a sauce of shallots, butter and capers.

but the verdict! seriously, exactly look/feel/taste like Ikan Pari!!!! although i dunno if this is a salt water or fresh water fish because my taste buds not that sharp, hor.. (and yes, this remark is directed to you, abah!!)

anyway some pictures of our plates. this is vin's plate (clockwise from left, pasta agli i olio, garlic fries, roast asparagus and mushroom, and the skate/pari):
http://img.photobucket.com/albums/v111/sjamalludin/IMG_1724a.jpg

and here is vin's meal, including his salad bowl that is ringed by home made 30 Minutes Bread slathered with garlic butter.
http://img.photobucket.com/albums/v111/sjamalludin/IMG_1723a.jpg

this was my plate (clockwise from top left, bit of bread and butter, pasta agli i olio, asparagus/shrooms, garlic fries, and skate):
http://img.photobucket.com/albums/v111/sjamalludin/IMG_1727a.jpg

side view of my plate:
http://img.photobucket.com/albums/v111/sjamalludin/IMG_1726a.jpg

rest assured, next time i see skate in the store (have to go to a special store, bit far - i live in ohio mah) i will get it and make the traditional ikan pari panggang with banana leaf and sambal...

Sila

and finally, what do you do if you make rosemary focaccia and a few days later there's still some left but it's stale and hard?? make savory bread pudding!!

here's my leftover focaccia Savory Bread Pudding. i cobbled together a bunch of recipes and threw in what i had to finish in the fridge, and that was caramelized onions, garlic and spinach sauteed together, throw into the egg and half and half custard base, salt + pepper, and fresh thyme. cube the focaccia and let it soak in the custard for about an hour. then pour into a baking dish and bake.

wahliao...vin sampai want to jilat this baking dish... he really liked it. and the bread which before soaking was keras nak mampus, turned out moist and soft and actually fluffy! i was very surprised... :smile-2:

thanks PPearl... yeah i dunno if it's exactly the same fish as our ikan pari or not (which is Stingray, right?) but when cooked up it looked exactly the same under the skin. very happy to have found it, sad that i have to go to a grocer bit far away to get it. the regular grocery store doesn't carry this kind of fish, just the usual salmon, trout, cod, and other north american regular fish.

hey don't bite monitor, ya? i bet that would hurt.. :D

Righto. Chopping with machine but mix with hand just like how you would pound the dough for bread. Problem is the mixture temp is usually near or below 4C. After a while fingers will be dem painful and goes numb.

Yes there are dedicated stuffers but not yet get one. If I can get a machine that can do most of the processes and yet can tahan lasak then might as well I get it right? But I heard there are some complications of not using a dedicated stuffer as well-lah. Pening also sometimes.
