Sila, I think you bake roti more than rendang. So no more rendang chatter :D .

My 2 elder kids having 1/2 day school on Saturday. That is the time I get to work around the house peacefully and quickly. Hubby will look after the baby while I cook. He is great.
I prefer cooking something like curry or stew so that I can eat them for lunch and dinner :D . This is called lazy bugger. Save another round of cooking during dinner. At least I will have some time for gardening in the evening.

If possible buy the salted fish head. I bought the flesh and head (bone) mixed. After cooking, all the daging seems missing. Left the bone only.

I used to bake cakes and pizza when i was in Ipoh. Somehow my bread never turn out right. How do you get the soft and fluffy bread? Mine always turn out heavy and soggy.

I soak mine for 1/2 hr. It all depends on the manufacturer. Some ppl can make their salted fish real salty. I didn't put any salt into the curry and it's all so tasty from the salted fish. And my salted fish turn unsalty :laugh: . So, if the next time i cook, I will just wash them without soaking.

You must get a good and fresh yeast. Let it raise and pound them again. Repeat that twice. That's how I does mine. Not sure about Sila.

You must get a good and fresh yeast. Let it raise and pound them again. Repeat that twice. That's how I does mine. Not sure about Sila.
I use dry yeast, using breadmaker so everything auto. I think the recipe not right. Can PM me urs? TQ.

Did you allow enough time to raise the bread? If the temperature in the house is not hot enough, it is best to take the dough outside and leave it in the sun for sometime.

Shirlene, you must soak dry yeast in warm not hot water with some sugar first untill it bubbles before mixing into the flour.

breadmaker's bread usually truns out to be harder than manually beating it in the mixer. and it also depends on the brand of the breadmaker.

Gardenia has bread softener and preservatives to make the bread soft and last longer. They usually last 4-5 days while homemade bread without presevatives only last 2 days max 3.

As we were in the biz, we had to have product knowledge incl technical knowledge. We have sold our shop since then but my wiffy is still baking all the time at home. Pau, all sorts of bread, tiramisu, American Choc Cake, Cheese cake/ tarts, etc, etc. She is also in the Sri Damansara Ladies Club and sometimes teaches a few recipes. Next week, Cheese Tart.

used to be but now slow down quite a bit. Bcoz of work, I usually missed lunch. So I take a medium bf. Mostly ta pau bread, pau, etc and eat in the traffic jam on the way to work.

shirlene - go to this old thread (http://www.acs-sitiawan.com/forum/showthread.php?p=61807&highlight=cuban+bread#post61807) for a recipe for Cuban Bread. it is a starter bread and the first one i ever baked, actually.
seems like what is key is ingredients - for cuban bread, i use Bread flour and All purpose flour (3 parts all purpose to 1 bread flour ratio) to approximate the french flour. also the yeast - dunno about breadmaker because i make bread using a mixer (just eliminate the kneading by hand! haiyooo!) but i do proof the yeast - warm water + sugar + yeast to let it activate and bubble up. and this bread is easy because the rising time is shorter.
someone said, let it rise, punch down and let it rise again - that is how i do my breads too.
but as a quick sneak preview, here's what cuban bread looks like when finished, hard crust on the outside, soft and fluffy on the inside:

I am from a mix parentage. Only learned the how to cook their dishes from my MIL. So far so good...everyone seemed to like my cooking. The first time I tried to tumis the chilies it was bursting every where I was screaming in pain and finally i found a solution....took some kitchen towels and wrapped around both my arms and wore sun glasses (at that time I was not wearing my specs yet).....LOL :laugh: My MIL was laughing her guts off. So shy la...but now terror already...kan tahan the splatter of hot oil!!!!

my sis used to wear sunglasses when peeling small red onions...:worried: thatz shallots right - to prevent tearing!

Do you gals know why you tear when you are peeling the shallots? Because your knife is not sharp enough. Same goes during cutting.

The thing is dislike most is when somebody ask you for a recipe, the recipe is on paper, then they say email to me, lah. And I have to sit down to type it all out. yup, tatz medically known as Lactational amenorrhea (direct translation - absence of "best friend" due to breastfeeding.
its a natural form of contraceptive...can be used for 6 mths after delivery, provided u dont get menses at ALL! after 6 mths, highly recommended to combine this method with barrier method...eg: the rubber lar :squeeze:

so here's what i made this weekend. it's called Pain Battu au Fromage or in non-fancy talk, Cheese Batter Bread (sorry ah, all the names are given in thebook i can't make it up if want to!).
basically, got a ton of parmigiano reggiano cheese in the bread.
here's the bread after the first rising, pour into the loaf pan:

i have to say i'm very pleased with the way the cheese bread turned out. vin loves it - he said it was better than what you get at restaurants! :o hehehhehehe... the crust was nice and crusty and the inside soft and fluffy. i think it definitely merits being made again sometime! :D

don't get a bread machine! get a good mixer. bread machines are more restrictive - can't make long loaves or round loaves. i love doing this using a mixer and getting down and dirty with it!
you can get a good food processor and make bread in that too.
i'm thinking of getting the pasta maker attachment for my mixer - went to dinner at a colleague's house on sunday and it was scrumptuous. her husband made homemade fettucini and it was to die for! he says if i get a pasta making attachment to my mixer, he'll give me his recipe. also, the mixer even has an ice cream maker attachment you can get!! amazing!

waaaah we used to make this in the freezer but not with the long plastic. just put in cups and stick it in the freezer. also good like that!! :D maybe can put a stick in the middle and make a milo ais popsicle!

my friends adviced me against doing it or i'll end up injuring myself...
plus now i have 4 evening classes a week, gensoc to run, a bit hectic...
wait till things settle down again, hopefully sooner rather than later, then will get back into training...

this time the top of the cheese bread was cheesier and it got brown and crusty and the cheese was a bit crispy. vin really liked it like that.
then i made bread #3 (semua on sunday evening for buka puasa!) the only day i cooked this weekend, actually. i was ketagihing "pao" so i had to make my own lah! however, since most of it is to be eaten by vin and i dunno how to make kaya, so i made it a bit of fusion pao - east meets west, the filling is the same filling for the Greek Spanakopita (or spinach pie).

ok la i admit, the pao is kind of ugly. not cute and round and pretty like the store bought ones, but give me chance loh, first time i made pao what...
but vin liked the taste of it and has given it the thumbs up!

So hari nii tak nak bagi dia masak....tapi besok nak mintak noor masak nasi lemak. Tak tau lah, tapi both her and my sister in law makes really mean ie tasty sambal ikan bilis, memang besar selera bila makan :)
