hey so i am making chicken rendang for dinner tonight...my mother's recipe. it's amazing how easy it actually is and it's like magic because there's no kari powder or anything like that involved...

vin's plate: 2 pieces chicken rendang at the top of the plate, below right is potatoes with olive oil, salt, pepper and kunyit, baked (more healthy than frying mah...), and below left, mushroom and spinach stir fry. 3 pieces of home made onion bread with butter around the plate.

would have made pulut kuning but have no pulut in the house. and we had rice yesterday so vin wanted potatoes tonight.

My main concern is those joining from outside US......I mean, i can only spend like 1-3 days but if they come all the way from overseas, and we stay 1-3 days, a bit weird for them right? Dunno...unless we can have one just for those already in US....

LA would be a good option also coz it will be cheaper as we don't have to spend that much money in theme parks. But all depends on timing and what most people want to do. As said in earlier posts, vacation days are limited for some of us, we can only hang around for a few days....so after that, you can go exploring to your hearts content.... :D

very good, lilian!

the kerisik, dino, is grated coconut, you have to goreng tanpa minyak (i baked it in the oven because i too lazy to goreng tanpa minyak, must constantly stir) until it is nice and brown and toasty (smells very nice) then traditionally you must use the batu tumbuk and grind it until it becomes a paste and the oils rise to the surface. after i roasted the grated coconut in the oven, then i just put in the blender and blended. much faster and no sweat from pounding and pounding (this used to be my job when my mum made rendang). i just use about a tbs of the stuff, then i froze the rest in the freezer and tahan for a few months even! woohooooo! then easy to make rendang ;)

i couldn't find turmeric leaves in ohio so i had to omit, but i could find the kaffir lime leaves. racik = "julienne"

went to maryland to visit vin's aunties. it was a good trip other than driving up and down the east coast. urgh. next time: FLY. avoid NYC. should be 4.5 hours drive, we drove 7 hours. why? stupid NYC traffic. grrrrr....

but, we ate fresh caught maryland blue crab caught off of Uncle Dean's dock (in the backyard it opens into a canal that leads to the Chesapeake Bay), went fishing (i caught 4 Croakers, 3 of which were big enough to keep, 1 "oyster croaker" dunno lah this fish looks like a toad, and 5 crabs on my fishing pole). i beat Uncle Dean AND vin put together. haahahahahaha!!! aunt dolores was very amused that i beat the boys. we ended up cleaning the fish and putting in their freezer as we couldn't bring back with us. my hotel room no kitchen. but i thought, mmmm steam with sweet sour sauce or steam with scallions, ginger, lemongrass and lime...wah would be quite good!

had lunch with Aunt Joan and Uncle John. also another day had lunch with Cousin Barb, hubby Ben & kids Stewart and Claire. it was very fun. lots of crabs to eat. my skin is itching like crazy (allergic mah, but so yummy must eat). long live antihistamines!!! :D

no no soft shell crab. in maryland, they really go for the regular maryland blue shells, steamed with Old Bay. ;) cover the table with newspapers, no plates, sit there with wooden crab hammers and butter knives to help pry open the crab. very fun! very messy! crab squished here there and everywhere!!! (kind of like the crab-eating scene in Runaway Bride - when richard gere invites himself to dinner at julia robert's house with dad & granma)

soft shell crab it seems they export out of state. i didn't even see it on the menu when we went out, but i saw the place where they rear the crabs for soft-shell production. aunt dolores explained the whole "molting" = soft shell thing, and that marylanders like the regular crabs. i've eaten it before though - very yummy.

the antihistamines do work for me. i have pretty minor allergies really, and now i feel like i'm allergic to just about everything. i have inherited my dad's skin and it seems like if i think about a spot, it will begin to itch. after crabs especially, you can see the little ruam-like spots rise up on my legs.

however, none of the OTC antihistamines do anything but put me to sleep. it is kind of unpredictable, i agree. these days i take Allegra every other day so my skin irritations don't go overboard. works well, and so far i haven't noticed any side effects. here, Allegra is a prescription antihistamine.

:eek: killing ketams! Till now, I still dare not do it.....let the men in my house do it.....must be really sweet and delicious since they're so fresh. Tok about allergy, still remember cleary how poor Lil was worried when she thought she had chicken-pox when she had allergy from the rojak she had earlier....ada prawn paste added to it. Tok about allergy, still remember cleary how poor Lil was worried when she thought she had chicken-pox when she had allergy from the rojak she had earlier....ada prawn paste added to it. omg i am seriously suffering from forum withdrawal. i flew home to ohio friday night, got there around 8 PM, vin picked me up, went to dinner and didn't get home until past 10 PM. saturday we went grocery shopping, bought a grill, and then from 3-8 PM i stood in the kitchen and cooked up a storm. we'd invited vin's baseball team to come over after the game on sunday for a cookout.

so i made cold sesame noodles, baked penne & meatballs, orzo with garlic, olive oil, carrots, parsley and celery, 2 rosemary focaccias, and managed to make jerk chicken for dinner on our new grill. well vin did the grilling i just marinated the chicken. boy i was exhausted. then sunday i drove vin to the game, came back and cleaned the kitchen and the floors, then went back to the game for a bit, then came back home to start the charcoal going and making burger patties.

we had 7-8 guests who hung out outside, relaxing and chitchatting. they ate the food but there is quite a bit leftover because i prepped for about 20 people. so now vin will have plenty of leftovers for the week!

ah very easy recipe :) you know they usually goreng the potatoes but i did it in the healthy way.

ingredients:
4 large potatoes
1 tsp turmeric (serbuk kunyit)
oil
salt to taste
pepper

Preheat oven to 350 F (180 C?).

Peel potatoes, cut into discs about 1/4 inch thick. Put in mixing bowl. Pour a little oil in (about 1 tbsp) and coat the potatoes. If using olive oil, can put more because it tastes nice and is good for you. Add salt, pepper and turmeric, kacau kacau until it's nice and yellow all over. If necessary add a bit more turmeric lah - i agak agak only.

Spread out on a baking sheet. Bake for about 35-40 minutes or until tender.

voila!

If you want to fry oso can but of course you add a lot of oil then. This way it is bit healthier, and you don't have to stand there and keep stirring while it cooks.

whenever we fire up the grill, we grill a whole bunch of stuff. afterall the coals are all hot, might as well put what we can on there. we been grilling lemons too - a la bobby flay. lovely and juicy after wards, nice on the fish.

2 weeks ago, I had portabello mushrooms grilled on a BBQ, with just a pat of butter.... tasted better than all those chicken, venison sausages and whatever salad they had on the table. Bugger!!!... Damn good i tell you!!!!

Also, funny how it tastes uncannily like meat... I'm a portabello mushroom fan now. Like this, i no problem becoming a vegetarian for life!

yah dream - portabellos they say it tastes "beefy" but i sure do love it. leftovers are nice if you slice and make into sandwiches, or omelette. but with a bit of olive oil, mmmmm yummy!!
