it's festival of science this week... going to a forensic talk 7pm... :)

2 weeks ago, I had portabello mushrooms grilled on a BBQ, with just a pat of butter.... tasted better than all those chicken, venison sausages and whatever salad they had on the table. Bugger!!!... Damn good i tell you!!!!

Also, funny how it tastes uncannily like meat... I'm a portabello mushroom fan now. Like this, i no problem becoming a vegetarian for life!

Its pretty expensive actually. Normal retail price is about USD$6.99 a pound. I am sure if i go to asian stores, i can get it cheaper. 1 Portabello weighs about 1/2 pound.

Actually I makan the portabellos in England.... at a BBQ at my friend's place. My boss says Malaysia can get also, imported from Australia.

Probably should try at Cold Storage or something.... where expats do they their shopping.

are you guys ready for more bread? this is called Challah. it is a jewish festival bread, rich in eggs and with a pinch of saffron. VERY nice to make french toast (on the menu for brunch tomorrow, speaking of french toast).

it's got an egg yolk and sugar glaze on it - man it smelled SO good even a few minutes after it was put in the oven. i can't wait for french toast tomorrow!

it's always a good time for maggi mee (vin just said "it's never a bad time for maggi mee!") heeehehehehe. he's learning. he is excited to eat the challah for dinner. woohoooo! we both already tasted a piece, fresh from the oven spread with a little butter. it was good.

vin also said in the first pic i posted of the challah, it kind of looks like 2 roasted chickens, esp the one on the right with the legs ter-kangkang :laugh:

Japanese, Korean, Filipino, etc...melting pot of the States...what re you in the mood for....hard to find Malaysian food though...but u got to go to a Luau to experience Hawaiian culture and food...:p

definitely the hawaiian food....also, since it is like malaysia wih all the different culture, we have what we call local food...for example, Loco Moco is def local food...hamburger patties over rice with fried egg covered with gravy...*drool*...:p BTW, spam is the state meat of hawaii....lol....

this is a first look at my first try with rye flour. pictures are from last weekend - it's called "Old Milwaukee Rye" bread, made by letting the rye flour "sponge" ferment for 3 days to get nice and sour before making the bread. sounds weird. i was afraid of fungus and what-not, since we are used to mold growing so quickly in Malaysia, but keeping it covered tightly with plastic wrap did the trick.

anyway, no pictures of the sponge or the before/after rising, just the end product.

and vin really liked the bread and used it for sandwiches all week. so he asked me to make more of it. this week, i made another loaf of it, started the sponge on thursday so now it's pretty much fresh from the oven! i made it in "baton" shape, instead of a round loaf - easier to make sandwiches.

aww thanks, dream. but you know, once it becomes work, it won't be as much fun for me to do. so far i love doing it because it's fun :D i don't think opening a bakery is in the future for me, but i sure do love playing in the kitchen. i'll keep experimenting and posting the results in here.

i'm pretty far north, but even so last night we got a looot of rain overnight, that's leftover from hurricane rita. but that's it. very lucky compared to the gulf coast folks who were flooded and blown about..

here's the Flat Bread-naan combo recipe:

1 1/2 cup warm water
1 packet "Highly active" dry yeast (if you get "Active" dry yeast, double the rising time)
4-5 cups all purpose flour
2 tbs oil
1 cup chopped/grated onion
1 tbs butter
salt to taste
1 tsp sugar

fry onion in butter on low heat, in a covered pan 3-5 minutes, until soft, translucent but not brown. let onion cool to room temperature.

mix water and yeast, let stand 10 minutes. gradually pour in 2 cups of flour and incorporate. mix for 1 minute to form a sponge. let stand covered at about 100 F (i turn my oven on to warm and turn off before i put the bread in) for 30 minutes. put sponge in mixer bowl and use the dough hook, add salt and oil and sugar, then flour 1/2 cup at a time to form the dough. knead until smooth (can do by hand too). let the dough be a little sticky, so it will be a moist bread. place in oiled bowl and let rise for about 1 hour 15 minutes (again in the warmer temperature, about 100F is good for the highly active yeast). divide dough into 3 balls, let it rest for 30 minutes. then flatten the dough, brush liberally with olive oil (this helps contain the stickiness) and throw on the grill. grill on 1 side until golden brown, then turn over and grill on the other side. (it took about 2 minutes on each side with the grill being quite hot).


the yeast kept the dough nice and moist after it cooked - didn't rise very big at all but was soft and fluffy. :) enjoy!

last saturday, these were what i baked. they're called Grandma's Southern Biscuits. traditionally, these biscuits are not what we call biscuits in malaysia. it's like a roll almost, or like a salty light, scone.

these i made i think needed a bit of help because they end up looking more like large sugar cookies than biscuits, but although they looked a little funky they were fluffy and they tasted just like the biscuits i've had from restaurants..

vin's brunch last saturday, beef sausage, eggs sunny side up, and biscuits. for a true traditional Southern American breakfast, we would need grits and gravy. but this was close enough for vin :D

I used to be like that. I have since learnt to appreciate cooking and eating eggs without any kicap and sauce. I dunno... there's something about the taste and texture of a fried egg that I like :D
